JALISCO (LOS VALLES), MEXICO
This local and artisanal tequila is proudly produced by two Canadians. With this product, they're attempting to capture the joy of embracing life to its fullest and the vibrancy of Mexico, a country they have both been tremendously inspired by. The bottle was designed to represent traditional Mexican elements but still have a modern feel to it — timeless but suited to the present day. Their brand and each bottle, "pays respect to Maestra Tequilero Luis Trejo and his craftsmanship by including his signature on every finely crafted bottle."
This tequila uses Blue Weber Agave from the Lowlands, Tequila Valley, which is at an altitude of 1,200m and is aged for approximately 8 years. The Distillery, La Cofradia, is located in Tequila, Jalisco. It is cooked in stone ovens for 40 hours and then cooled for 8. Crushing is done via a screw mill. Natural yeasts are used (derived from the agave) and fermentation takes place in stainless steel tanks. It is distilled twice with copper coil and only the "heart" is used. Barrels have been used prior; they are charred, American Oak Whiskey. The tequila is aged for 8 months.
This is small-batch tequila reposado with only 3000 bottles made. It has notes of cooked agave, caramel, oak & citrus. 40% alcohol.
