Bright, inviting floral, pear and citrus aromas lead to a lively and harmonious palate.  Resplendent with jasmine and citrus notes that range from grapefruit to lemongrass and kafir lime, delightfully nuanced by tropical notes, this wine delivers quintessential Honig sauvignon blanc style.

The grapes were harvested during cooler night-time and early morning temperatures, preserving the inherent aromas and flavors. All the fruit was whole cluster pressed and the juice was settled before racking off lees. Fermentation was at moderately cool temperatures (60-65 F) in stainless steel tanks using a variety of yeast strains selected to enrich the aroma and flavor profiles of Sauvignon Blanc.  Aged on light lees, in stainless steel tanks, prior to blending and bottling.

The wines of Domaine Christophe all display classic Chablis notes of shells and green apples on the nose, along with a pretty, underlying hint of white flower and lemon. Classic Hunter Valley Semillon from another strong vintage. The nose is vibrant with an abundance of citrus fruits and floral elements. The palate is medium bodied, yet intense, with great length and a brisk acidity.

2023 was a classic Semillon vintage in the Hunter Valley, producing full flavoured Semillons with the power and intensity only seen in truly great vintages. This wine is sourced predominantly from our iconic HVD Vineyard, with an average vine age of 30 years.

In the lead up to the 2023 vintage, there was an abundance of rain in spring which gave us great soil moisture heading into the dry months of December and January. The harvest period was relatively stress-free without any adverse conditions such as rain or heat. All of the Semillon cropped well and was in immaculate condition.

After gentle pressing, fermentation took place in stainless steel tanks. The wine then spent a short amount of time on yeast lees to gain extra complexity and mouth feel.

Based in Hunter Valley, Australia, Tyrrell's produces one of the world's most famous (and delicious) Semillons, Vat 1. This more entry-level wine showcases the typical character of young Semillon, with lime flower perfume on the nose, bracing acidity and a depth of juicy lime citrus fruit on the palate. It's very enjoyable now – try it with sushi – but I'd urge you to buy a bottle or two to lay down. Leave it for a few years and it will start to develop nuttier, toastier characteristics, despite spending no time in oak during vinification.

Notes

Savagnin blanc is mostly grown in the Jura. It is most famous as the only grape allowed in the vin jaunes of Château-Chalon and L'Étoile, similar to fino sherry with a covering of flor but not fortified and without the use of the solera system.

100% Savagnin aged for 4 years in barrel without being topped up before bottling. This is a “baby Vin Jaune” according to Jean Francois. Powerful aromatics and richness.

Caves Jean Bourdy is one of the oldest domaines in the Jura. Created in the late 1400’s, the Domaine is now run by brothers Jean-Phillipe and Jean-François, the 15th generation of winemakers at this estate. The Bourdys grow their vines on 10 hectares of land, including a half hectare in Chateau Chalon AOC. Caves Jean Bourdy makes wine the old fashioned way, using old barrels—some as much as 80 years old—for fermentation and aging of the wines. The Domaine was certified biodynamic in 2006, and the combination of some of the best terroir in the Jura and careful and patient winemaking results in wines that thoroughly express the land on which it is grown.

Winemaker Notes:

Our flagship white wine, a wine of grace and elegance, is a classic Bordeaux blend of Sauvignon Blanc and Sémillon. Each vineyard block was separately harvested, by hand, at peak maturity. The grapes were whole-cluster pressed and then fermented entirely in barrel (French oak puncheons) with the majority undergoing only wild, spontaneous fermentation. One-quarter of the barrels were also allowed to undergo wild malolactic fermentation. All lots were barrel-aged for nine months, on the lees, with lees stirring. The final wine was created by blending together just the very best barrel lots, in order to create a wine of true complexity and elegance.

This wine is light gold in the glass. It has intense aromas of grapefruit, beeswax, lime zest, and meadow grasses. On the palate, it shows an array of flavours: lemon and lime and ripe grapefruit, with notes of peach and apricot and all tied together with bright, crisp citrus acidity. On the palate, the wine is full and rich with a textural softness resulting from sur-lie ageing. A lovely saline minerality strings it all together, through to the very long finish.

The grapes are harvested at night and fermented at a low temperature. This seems to bring out the best in them. Some of these grapes are aged in barrels before they are all blended back together. It’s an unusual method but from the unusual comes the exceptional.

Côte 228 is a well-balanced wine with rich oak aged character. This complex wine shows generous fruit aromas such as crisp pears. The finish is mineral.

The grapes are pressed and the juice undergoes active maceration on the lees for five days at 5 to 8°C. This helps to release and preserve as many of the aroma precursors in the skins as possible, which will later reveal the typical aromas of the Sauvignon Blanc grape when they come into contact with native yeast. On fine lees in vats and eggs. This helps prevent oxidation of the wine’s aromas and adds richness, body and complexity on the palate.

A pale, bright yellow colour with some touches of green. White peach and mint aromas come through first on the nose, then mingle with lemony touches. Elegant on the palate with beautiful balance between a soft attack and a lingering, mouth-watering mineral finish.

Two new vineyard sources are at the core of this blend. From alluvial soils slightly further inland than our West Sonoma Coast Estate, young vine Old Wente and old vine Clone 4 combine to capture the essence of how we, at Ernest, view Chardonnay. Ripening earlier in the season, these grapes are picked with the acid still very intact but with full physiological ripeness. The old vines giving us full pear and ripe apples notes while the Old Wente drives the palate with minerality and verve. Native fermentations in 228L French Oak barrels, 25% of which are new, this wine was bottled after 10 months on the lees, and a light filtration.

A bright canary yellow wine with clear and luscious golden hues. The fruit notes are reminiscent of Asian pears and loquats with hints of sour unripe pineapples. The minerality is also up-front with nuances of ocean air, wet sands, and oyster shells. For Burgundy lovers, this Chardonnay has the subtlety of flavors and exuberance of acidity and terroir. This is without a doubt a “wine of place” our newest AVA - the maritime-influenced 'West Sonoma Coast'.

Beginning with meticulous site selection and vineyard design started in 1991, Felton Road's story is one of refusal to compromise. A strict 100% estate policy with fully organic and biodynamic viticulture (Demeter certified) ensures that our fruit arrives at the winery as pure as it can be, while our entire estate comes as close to true sustainability as is possible. A commitment to hands off winemaking: gravity flow, wild yeasts, wild malo, an avoidance of fining and filtration all help preserve the wine's expression of its terroir. The result is Riesling, Chardonnay and Pinot Noir which accurately express the authenticity and complexity of our unique vineyards.

The nose leads with white florals and crushed stones that overlay aromas of pear, cucumber and lemon zest. The palate is surprisingly expansive as the acidity perfectly integrates with the weight and depth of fruit. A bold and expressive dry Riesling with considerable drive and length. Salivating and contemplative of its schist soils origin.

Not the biggest white wine cuvée at Maison Champy at only 25 barrels, but this 1ha parcel planted in the 1970s has produced a very stylish, saline, focused Chardonnay in the heat of 2018, with sweet vanilla-spicy oak, subtle gunflint aromas and a core of fresh, tangy, citrus and lime fruit.

Winemaker Notes

These vineyards cover the hilly slopes of Aloxe-Corton and Savigny-lès-Beaune. There are only four Premier Crus Pinot Noirs: “Les Fichots”, “En Caradeux”, “Creux de la Net”, “Iles des Hautes et Basses Vergelesses”. This wine is aged in a 350-barrel and a 228-litre used barrel. The wine is open and intense on the nose with notes of orange and grapefruit. The attack is fresh and supple. A well-balanced and concentrated wine with good mineral length on the finish.

Winemaker Notes

The wines of Domaine Christophe all display classic Chablis notes of shells and green apples on the nose, along with a pretty, underlying hint of white flower and lemon. It's the kind of bright nose that gives the drinker an intimation of the acidity and tension that will follow on the palate, which is indeed nervy but also generous with an appealing balance of flavours offset by a rocky, shell-y harmony. The wine finishes with the sort of mouth-coating minerality and mouth-watering citrusy acidity that makes Chablis a favourite amongst lovers of wines that truly reflect their terroir. 

Fourchaume is one of the most famous climates in Chablis with west/southwest sunny terroir, where the grapes ripen well. Complex and super intense, distinguishing itself from the rest of the region with its elegance, finesse and roundness. It’s textbook 1er cru Chablis that slowly unveils incredible depth and sophistication in the glass. Made from mostly brown clay soil that drains well and runs incredibly deep to the roots, this has an incredible combo of pineapple, grapefruit, chalky minerality, wildflower, and granny smith apple that continue to unfold with time in the glass.

Winemaker Notes

The estate has been in the family for five generations. Sister / Brother Margaux and Dorian are currently in charge of the organically farmed 51 hectare property divided up into two appellations: Francs Côtes de Bordeaux and Castillon Côtes de Bordeaux (10 hectare in red). Both of them are located on the Right Bank in the very eastern edge of the hilly Bordeaux wine region, near Saint Emilion. The terroir is composed of sub-soil made up of fossil-rich limestone covered with limestone molasse called «molasses d’Agenais». The siblings have created a realm of biodiversity, with regenerative agriculture, agroforestry, winter weed management with a local shepherd,  and protection to the local fauna. 

A full bodied, food friendly wine, with flavours of peach and dried grass and a crisp, textured dry finish. Baked-apple and wood aromas show strongly in this ripe wine. Balancing the toastiness, the ripe fruits are complex, peach and apple flavors going along with the spice.

A whole-bunch, clay pot, bees-waxy Palomino. The wine is true to it’s name - (L’E) STRANGE! It's made from humble Palomino, which originated in the Sherry producing areas of Spain. The cuttings were brought to the African continent by ship and planted in 1965 on the mountain in Piekenierskloof, 550 meters above sea level. The 54-year old bush-vine vineyard, grown in African soil was made in African pots made from Limpopo clay, enhanced by the wax of African bees producing honey from African flora - meticulously guided, bottled and labelled by the colourful hands of the African people.

Winemaker Notes

Aromas of yellow pear, lemon curd, jasmine and a hint of oak lead to flavors of citrus, chamomile, orange blossom and brown butter. A rich mid-palate weight creates a complex wine with a lingering finish.

Pairs with goat cheese, shell fish, roasted chicken and salads.

Black Stallion is located on the historic Silverado Trail in Napa Valley's Oak Knoll District, and was once home to the Silverado Equestrian Center, an indoor arena that welcomed up to 3,000 visitors. The property's name pays homage to this equestrian history, and today its 32 hectares cover some of Napa's most prestigious vineyards. No fewer than 17 parcels and 11 varieties (for now) contribute to the blend of this impressive white. Palomino, Chenin Blanc and Grenache Blanc are the dominant grapes in a wine that nods towards the southern Rhône and Spain. Less exotic than it was, Palladius is tauter and more focused these days, with freshness and zip form Clairette Blanche, Colombard and Verdelho, citrus, pear, lemongrass and aromatic herb notes and a tangy, wet stone finish.

The grapes were picked at optimal ripeness and cooled overnight to 4 degrees celsius. The next morning the grapes were pressed as whole bunches. The juice underwent spontaneous fermentation in concrete egg shaped tanks, amphora and older French oak barrels. Deep winter the wine received one sulfur addition. 10 months on the leese, blended and bottled.

Autumn Equinox is a new wine from Pieter Walser - or rather a resurrected one, as it was called DOK in a previous life - made from an assemblage of Semillon, 30% Riesling and 25% Sauvignon Blanc. Aged in amphoras and old wood for a year, it's sappy, intense and very stony, with pear, lemon zest and lanolin notes and layers of intrigue and complexity. Drink 2023-29’

This is OUR favourite wine, not necessarily the best. The one that we as a team like the most. It is not bound to an area or varietal - it is an assembly of interesting things that differs from year to year according to whatever performed well that specific season.

Winemaker Notes

Brilliant, intensive yellow is the color of our white blend Beyond the Clouds. In the nose, a complex, beguiling play of aromas unfurls with fruity nuances of exotic fruits such as pineapple, notes of blossoms and flowers, of rose petals and light toast aromas. Dense and complex, the wine enthuses on the palate: with fullness and structure, creamily soft and elegant, stimulatingly fresh and juicy with a discreetly incorporated, modest note of wood and a long reverberation of taste.

 

96 Points, James Button, Decanter (2020 Vintage)

I've asked fifth-generation Julia Walch on several occasions about the blend for Beyond The Clouds, but she steadfastly refuses to give away the secret, other than to confirm that it's ‘up to 85% Chardonnay’. 2000 was the first release and it has since risen to become one of Alto Adige's most noteworthy whites. The grapes are all picked on the same day and co-fermented in French oak barriques, one-third new. Still woody, it's clean and fresh with an intense stony core of pithy pink grapefruit, apricot skin, nectarine, and some smoky, flinty notes. Vertical and with great balance, it combines glacial freshness with a creamy, fragrant finish of apricot and jasmine. Older vintages have developed lovely exotic yellow fruit characters, and you can expect the same here. Loads of potential.
