White flowers, sliced pear and hints of wet stone lift up to form a pretty bouquet on the Bombino Bianco Marese. It’s silky-smooth and juicy in feel, offering ripe orchard fruits and inner florals that keep the expression fresh and lifted. The finale is crisp and clean with a flourish of minerality that keeps you coming back to the glass.

Vincent Caille 'Je T’aime Mais J’ai Soif' / Muscadet, France

Beautiful yellow-green color. Young and fruity wine which develops aromas of citrus fruit. The white wine “Je t’aime mais j’ai soif” can be served with seafood as well as
with fresh water fish or sea fish. It will be perfect for aperitif.

Raats Original Chenin / Stellenbosch, South Africa

The wine has a distinctive yellow apple, kiwi fruit and pineapple core, alongside notes of green melon and limes. The wine is thus bursting with fresh fruit flavors. The wine has a zesty citrus flavor linger on the palate, with a long mineral finish. Serve with mild curry dishes, sushi or oysters.

Telmo Rodriguez ‘Gaba do Xil’ Mencia  / Valdeorras, Spain
 
Telmo’s red wine, once again from Galicia, is a red that shows the character of the stony hills and the Atlantic Ocean. This is a red wine made of 100% Mencia, a Spanish varietal found scattered through the country’s northwest. The vineyards are organically farmed, and the fruit is fermented again in stainless steel in order to maintain freshness, and using indigenous yeasts. The influence of the Atlantic Ocean is on full display, with its moderating influence playing its part in bringing balance to the wine. While it is ripe and full bodied, much like its white counterpart, this is vibrant and focussed, with no shortage of complexity and minerality.

Map Maker Pinot Noir / Marlborough, New Zealand

‘Map Maker’ Pinot Noir is crafted from carefully selected parcels of fruit grown on unique sites within the famous Rapaura and Brancott areas of Marlborough. Our mixture of multiple individual parcels, 4 different clones and a range of soil profiles provide us with great variation of fruit, each with unique flavour and tannin structure.

This Pinot Noir has lovely aromas of ripe black cherries and wild violets. In the mouth the wine has a grainy tannin structure and is intensely flavoured with sweet cherries, cedarwood and savoury characters such as dried herbs and wild game flavours. This is a sophisticated Pinot Noir with an ‘old world’ elegance and mineral lingering finish.

Barbera lovers rejoice! Scavino delivers again and again with this approachable, fruity variety. Vinification and aging occur in stainless steel to purely deliver its character. Floral, elegant and expressive aromatics, high toned texture, harmonious and lively acidity.

Lisa Valtenbergs blends this wine from parcels on the Jackson family’s Alexander Mountain Estate, a 5,500-acre property on the western slopes of the Mayacamas Mountains. This is a classic California chardonnay in the best sense: A fresh, oak-guided beauty in shades of green-gold and white. Oak contributes a hint of butterscotch sweetness to an otherwise savory wine, layering scents of white roses, apples and wildflower honey through a lasting finish. The wine feels gracious, perplexing, intense and pure.

Purple-flecked onion skin color; delicate bouquet with notes of wild rose and cherry; crisp yet smooth palate, well balanced, with a subtle vein of acidity; lengthy, juicy finish.

Joseph Mellot 'Sincerite' Sauvignon Blanc / Sancerre France

The grapes for this wine are sourced from the main four appellations, including Sancerre and Pouilly Fume, which are known for their racy, mineral-driven style. The nose is fresh and vibrant with notes of lime zest, ruby grapefruit, green pear and mandarin oranges. There is an undercurrent of wet stones throughout. True to its terroir, it is refreshing with moderate acidity but it also has some weight in the mid-palate due to being aged on its fine lees.

Cabert Pinot Grigio / Friuli, Italy

Fruity, balanced, hints of nuts and toasted bread. Hors d’oeuvre, soups, fish and white meat. 

Amalaya Malbec  / Salta, Argentina
 
This wine is made with grapes from Las Mercedes Estate, sandy soil and very poor in organic matter. Mechanical harvest and aging in barrels of 25% of the wine with contributions from Tannat and Petit Verdot. Brilliant ruby color with violet edges. Strawberries, raspberries and ripe fruit with touch of pepper and spices aromas and elegant floral notes. In mouth, flavors of red fruit, spice and hints of vanilla from aging in French oak. Very nice freshness. Round, soft tannins lead to a delicate, lingering finish.

Speri Valpolicella Classico  / Veneto, Italy

This is packed tight with a concentrated, silky bead of ripe red berries and red cherries that drives through the palate, until fine, quite firm tannins block its path right at the end. Medium-bodied, but the concentration of fruit makes it feel heavier. Lots of energy here, but balance, too. Delicious now. Even better after another year in bottle. From organically grown grapes. Drink or hold.

Winemaker Notes

An incredible vintage and a return to greatness after a very challenging 2020 vintage, we truly couldn’t be more pleased with the 2021 Chardonnay “Un” wine. The aromatics quickly draw you in and are bathed in a deeply intoxicating melange of floral chamomile, quince, and flint. The textural balance is spot on this vintage, a trait we believe defines our wines.

Our Chardonnay “Un” is a cuvée of exceptional organic and biodynamic Chardonnay sites in the Willamette Valley. A mix of younger vines and long-term “estate-like” vines gives a truly cross-AVA look into Willamette Valley Chardonnay.

The wines are fermented with indigenous yeasts and kept on their lees for 9-10 months and we resist stirring the lees. We like to vary the ripeness levels to coax different profiles from each of our sites. We are very careful with the French and Austrian oak barrels we choose to let them help structure and season the wine, but not dominate (think overly salted dishes) the character of the Chardonnay sites.

Not the biggest white wine cuvée at Maison Champy at only 25 barrels, but this 1ha parcel planted in the 1970s has produced a very stylish, saline, focused Chardonnay in the heat of 2018, with sweet vanilla-spicy oak, subtle gunflint aromas and a core of fresh, tangy, citrus and lime fruit.

Winemaker Notes

These vineyards cover the hilly slopes of Aloxe-Corton and Savigny-lès-Beaune. There are only four Premier Crus Pinot Noirs: “Les Fichots”, “En Caradeux”, “Creux de la Net”, “Iles des Hautes et Basses Vergelesses”. This wine is aged in a 350-barrel and a 228-litre used barrel. The wine is open and intense on the nose with notes of orange and grapefruit. The attack is fresh and supple. A well-balanced and concentrated wine with good mineral length on the finish.

Winemaker Notes

A terroir from which world-renowned sweet wines are produced, the Chaume 1^er Cru and Quarts-de-Chaume Grand Cru appellations also have the capacity to produce great dry whites. The Ronceray cuvée refers to the Abbey of the same name, owner of the Chaume vineyard from the 11^th century. Until the French revolution the lords of Haute-Guerche, farming this vineyard, were paying the nuns with "the best quarter of the harvest"... The "Quarts-de-Chaume" name was born.

Ronceray is a complex wine, resulting from the blend of our plots on the rump of Quarts-de-Chaume. A terroir with complex geology, the marriage of shales and pudding sandstones gives this cuvée a sharp minerality and a floral and fruity richness. A fine bitterness, signature of this terroir, brings complexity and length on the palate.

Winemaker Notes

Our first white wine started out as an orange wine, fermented with the skins for an extended period. I liked the tactile feeling and density, but missed the finesse and precision of the classic French white wines from for example the Loire. With the vintage 2015 I changed our technique to search for the purity and flavors of Etna which evolved in maintaining a short period of skin contact and aging our white wines for an extended period in the coldest part of our cellar before bottling. The obtained elegance, purity and density makes this wine very suited to accompany a wide variety of dishes and cuisine, from fish to white meat.

This Chardonnay vineyard is right down near Old Town in NOTL, and is from the Four Mile Creek VQA. It was planted way back in 1983 when there was hardly any vinifera in Niagara! The Willms site is an enigma:  it produces subtly waxy Chardonnay with minty green, orange and yellow citrus on the nose; intense and broad, yet elegant, with a subtly-shaded minerality as palpable as from the bench. Willms possesses a texture that belies its Niagara-on-the-Lake origins. My theory is that the deep old vine roots and silty, slightly sandy soils confer a savoury minerality to the wine. It is broad, long, honeyed, elegant, and fabulously-textured!

Some ‘get’ “Da Wiz” right away, some find they prefer it with a little age. Always noble, closed-in, restrained when young, the Wismer-Wingfield Chardonnay is our latest ripening parcel. It’s the furthest from Lake Ontario (6.8 km!), at the highest elevation (169 metres at the very top), and has a sharp slope through the shorter rows. This makes for long hang-time and an intense, rich noble set of flavours, overlaid by a tight, long, tactile and flavourful, generous weight and noble, slatey minerality. One wants to call the “Hill of Wingfield”’ a ‘Grand Cru,’ but with no classification system yet in place in Niagara, one is not allowed. Majestic! (Ultimately, with time in your glass or in your cellar, like the great horse ‘Secretariat,’ this wine slowly pulls away from the pack and widens the gap with the passing of the years).

Beginning with meticulous site selection and vineyard design started in 1991, Felton Road's story is one of refusal to compromise. A strict 100% estate policy with fully organic and biodynamic viticulture (Demeter certified) ensures that our fruit arrives at the winery as pure as it can be, while our entire estate comes as close to true sustainability as is possible. A commitment to hands off winemaking: gravity flow, wild yeasts, wild malo, an avoidance of fining and filtration all help preserve the wine's expression of its terroir. The result is Riesling, Chardonnay and Pinot Noir which accurately express the authenticity and complexity of our unique vineyards.

Aromas of citrus peel and ginger combine with a distinct minerality. A burst of sweetness on first sip is immediately complimented by ripe stonefruit and mandarin flavours. The residual sugar quickly becomes secondary once the acidity and vibrancy of the fruit complete the harmonious mouthfeel. A tropical finish that lingers and intrigues.

Winemaker Notes

These vineyards cover the hilly slopes of Aloxe-Corton and Savigny-lès-Beaune. There are only four Premier Crus Pinot Noirs: “Les Fichots”, “En Caradeux”, “Creux de la Net”, “Iles des Hautes et Basses Vergelesses”. Two new “clos” have also received the appellation Premier Cru: “Clos du Village” and “Clos Berthier”.

The grapes from Domaine Champy's “Les Quartiers”, “Les Pins”, “La Morand” and “Derrière Frétille” are used in this wine. They are grown on clay and limestone soil. The grapes are harvested by hand, fermented and aged for 10 months in barrel (30% of which are new). This wine is pale golden in colour with hints of silver. It has good aromatic intensity and nice transparency. The nose opens with white flower, citrus and wild mint notes, and a mineral touch. A frank, fresh and elegant attack. On the palate, the wine is mineral, harmonious and rich, with a long and persistent finish.
