Domaine Bouchot is the first certified organic estate in the Loire Valley and in 2021 they will be officially biodynamic certified as well. The wines are made from 10 hectares worth of Sauvignon Blanc planted around the winery, which is located in the village of Saint Andelain on the east side of the Loire (facing Sancerre). Biodynamic practices are adhered to within the vineyard and winery and the wines are naturally fermented in stainless steel vats with indigenous yeasts and aged in either vat, barrique or amphora.
The vines for this 100% orange Sauvignon Blanc are grown in limestone and the producer chooses to wait and harvest the grapes once they are over-ripe. The wine is aged for one year in two-year-old barrels. It has an intense nose with spice and bready notes to it.
