Domaine Jean Bourdy Côtes du Jura Rouge / Jura, France
Floral cherry fruit mixed with earth and leather on the nose. Almost a perfect orchard and farm on the nose. The wild cherry fruit and floral components mixed with the adjacent barnyard and earth. Light bodied, complex, and elegant.
Dominique Piron Morgon La Chanaise / Beaujolais, France
This wine comes from one of the richer crus of Beaujolais. It has a deep, earthy nose with berry fruits. On the palate, notes of cherry and mushroom with well-balanced tannins and a good length.
Chateau de Caraguilhes Tian Ran / Corbieres, France
100% Cinsault from the vineyard named L’Olivette. Grapes are destemmed and crushed, then matured for 3 months in concrete vats, after which the wine is bottled. No added sulphites. Ethereal with notes of thyme and rosemary, touches of toasted bread. The nose then opens up a little more to produce more subtle aromas of peony and raspberry. Delicate, fruity and generous at the same time. A candid and juicy wine. This Cinsault opens up without any reserves. Pair with Iberico pork chops with thyme, capon with rosemary, or on its own under the pergola.
