Jaeger-Defaix is a part of a family estate in Rully 1er cru in Southern Burgundy with a history that dates back to the 16th century. Today the estate is run by Hélène Jaeger-Defaix, who's great grandfather Henri Niepce played an integral role in obtaining Rully’s AOC status in the 1930s. She took over the parcel from her great-aunt Henriette Niepce in 2002 with the hopes of carrying on the family’s winemaking traditions. Hélène is an agricultural engineer and oenologist and works closely with her husband Didier, a wine producer at Domaine Bernard Defaix in Chablis. The vineyards are all managed organically and the grapes are harvested by hand when they reach perfect maturity. Hélène has built up her knowledge of the different plots over the years, understanding the unique qualities they each possess, resulting in stellar wines of remarkable precision and great aromatic purity.
