Fourth generation winemaker Bernard Defaix established his Domaine in 1959. Bernard’s two sons Sylvain & Didier oversee operations today which stretch over 27 hectares including three Premier Cru vineyards (Côte de Léchet, Vaillons and Lys) and others in the Chablis and Petit Chablis appellations. After many years moving towards sustainable and more ecological farming practices, the vineyards were officially certified organic in 2009. Known for creating truly elegant wines, they produce exclusively Chablis, and are widely considered to be one of the finest producers in the region today.

Our vines on the appellation Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation. Our Chablis are characterised by their freshness, power and tenacity. Their bouquet displays a dominance of mineral notes, which are often associated with delicate touches of citrus fruit (lemon and grapefruit). This wine can be enjoyed within 2 years, an excellent match for seafood or fish.

Domaine Bernard Defaix is a highly-rated family estate based in Milly, with the vines for this bottling averaging 30 years age. Ten months lees ageing adds to the complexity on both the nose and palate. Refined, classy and complex characters on show here, which meld beautifully with the ripe peachy fruit notes. A very fine, expressive, distinctive Chablis which is ready to drink now but will age very well for many years.

We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.
When some of the plots were planted, we found impressive fossils of Exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential. To serve with fish or poultry, with white butter or cream sauces.
