Sébastien Christophe is a brilliant young winemaker and a one-man show making big waves in the Burgundy scene. His success has come completely by word of mouth, and with the exception of a few top restaurants in Paris, it is almost impossible to find his wines anywhere in France as he exports almost everything he makes. Sebastien’s family has roots in Chablis, and he got his start when he was gifted a tiny parcel of Petit Chablis. He has since steadily added vineyards and new bottlings to his portfolio and today has three premier crus on the right bank of the Serein river. Farming is organic, yields are very low and his winemaking is pretty hands-off, with indigenous yeast fermentation in stainless steel, allowing the terroir to shine through. Stylistically his wines are very old school Chablis, concentrated but mineral and nervy. He looks for elegance, length, purity and minerality in his wines and has extremely exacting standards, resulting in a quality that is just sensational. Absolutely one of the most exciting winemakers we’ve encountered.
