Éclats is a blend of the three main Champagne grape varieties, sourced from selected terroirs. Chardonnay is the dominant variety, followed by equal parts of the black grape varieties (Pinot Noir and Meunier). The musts come from the first two vintages and are mainly fermented in wood. The bottles are given time to develop their full aromas thanks to around 80 months of ageing in the cellar. The low dosage preserves the liveliness of this cuvée. Éclats' aromas are rich in white fruits, citrus fruits, flowers and notes of almond and toasted bread. It is recommended to enjoy it between 9 and 12 degrees to appreciate its creamy effervescence and lively freshness. Full-bodied aromas complement the wine, with a lively, salty finish offering refined complexity.

The 2020 LZ comes from an early harvest after a warm year not without challenges (mildew). The Tempranillo, Garnacha and Graciano grapes come from their own organically farmed vineyards and fermented in concrete vats with indigenous yeasts for 15 days; the wine matured in concrete for six to seven months before bottling. It's very primary and has notes of licorice and a juicy texture. Pablo Eguzkiza was telling me he likes 2020 better than 2019. The wine shows very good balance and fine, round tannins.

This wine comes from the first certified organic estate in the Loire Valley and in 2021 they became fully biodynamic certified as well. The wines are made from 10 hectares worth of Sauvignon Blanc planted around the winery, which is located in the village of Saint Andelain on the east side of the Loire (facing Sancerre). Biodynamic practices are taken within the vineyard and winery and the wines are naturally fermented in stainless steel vats with indigenous yeasts and aged in either vat, barrique or amphora.

A coating of ash and stone over the ripe citrus-fruit and apple notes on the nose. Turns to sweet apple and pear flavors on the medium-bodied, dense and silky palate. Quite a round, fruity feel, but the drive of acidity keeps it moving. The mineral notes return in the aftertaste. From organically grown grapes. Drink now.

Domaine Bernard Defaix is a highly-rated family estate based in Milly, with the vines for this bottling averaging 30 years age. Ten months lees ageing adds to the complexity on both the nose and palate. Refined, classy and complex characters on show here, which meld beautifully with the ripe peachy fruit notes. A very fine, expressive, distinctive Chablis which is ready to drink now but will age very well for many years.

It’s hard to pick just one of the many excellent Viogniers that Laurent Miquel produces around this price point, but for the money this is hard to beat, with its voluptuous white peach and nectarine fruit (harvested at night, as the name of the wine suggests).
