Jo Pithon became a true star and pioneer of natural winemaking when he launched Domaine Pithon-Paillé back in 1978. At a time when such things were almost unheard of in the Loire Valley, his vineyards focused entirely on low intervention, organic and biodynamic principles. The first to champion living soils, he modelled his winemaking after Burgundian methods, using single parcel selections and barrel aging, boldly producing dry whites in a region dominantly know for sweet dessert wines. After 40 years of winemaking, Jo was looking forward to retirement and sold his 22 hectare estate to his successor Ivan Massonat, a businessman and long-time wine enthusiast who now proudly continues Jo’s legacy under the Grololo & Co label, crafting artisan wines with quality, authenticity and deep respect for nature.

Winemaker Notes
The originality of our cuvée Mozaik is an assembly of Cabernet franc from two great terroirs and subsoil of Anjou: schist of Anjou “black” and limestone of Anjou “white”. The grapevines are cultivated in organic farming which has been converted to biodynamic farming. In order to get a gentle extraction of aromas and tannins, grape maceration is soft and smooth. The fermentation takes place in tanks and the aging has been done in neutral French oaks. A drop of sulfur is added before bottling to preserve the purity of our wines.
A garnet red color,. The bouquet is mixed with aromas of red fruit and black fruit. The mouth-feel is structured with beautiful acidity and a little tannic.

The grapevines are cultivated in organic farming which has been converted to biodynamic farming. Winemaking: Our grapes are pressed and then cold temperature settled. The fermentation takes place with natural yeasts in wooden frustoconical vats. The cuvée was aged for one year in these same barrels. A drop of sulfur is added before bottling to preserve the purity of our wines.
With pale yellow color, the aromas of clear white and clear yellow fruits. The mouth-feel is ample with beautiful acidity and characteristic of Chenin and the subsoil of schist.

Winemaker Notes
The vines are conducted in organic farming and in conversion to biodynamics. The three grape varieties are pressed for a long time and slowly, and aged in vats for a year. The final blend, with proportions leaving room for the expression of each grape variety, is carried out at the last moment.
A golden yellow color. The wine has a fruity and charming nose enhanced by Sauvignon, a full and greedy mouth from the Melon de Bourgogne, and tension from the Chenin.
