BILLECART-SALMON
BILLECART-SALMON
Husband and wife team Nicolas François Billecart and Elisabeth Salmon founded their Champagne House in the village of Mareuil-sur-Aÿ, near Epernay in 1818. Seven generations later, operations are led by Mathieu Roland-Billecart, with the support of Jean, Francois and Antoine Roland-Billecart. The family endeavours to preserve the best of their ancestral knowledge and traditions, while incorporating some of today’s modern technology. Select grapes are put through one of the last existing traditional presses in the region to produce their signature collection of delicate, fresh wines that are a true reflection of their distinct terroir.

Winemaker Notes
Billecart-Salmon's 2013 Vintage Champagne is dosed as Extra-Brut. The great Pinot Noirs dominate and are tempered by the elegance of Chardonnay from the Côte des Blancs, with a touch of Pinot Meunier for the signature.
After spending 9 years in the cellar, this champagne reveals itself to be intense and seductive, with intense aromas of hazelnuts and pomelos on the nose. On the palate, it is tense and charming with a slow and creamy foam. The finish is persistent.
Billecart-Salmon's 2013 Vintage Champagne, with its noble character and distinction, will be perfect with a ceviche of sea bream, a carpaccio of scallops or vegetable ravioli.
You can keep this sublime vintage for 8 to 10 years.

A vibrant Champagne, finely balanced and lacy in texture, serving as an elegant canvas for layered flavors of yellow peach, chopped almond, cherry, toast point and preserved lemon. Minerally smoke, chalk and spice notes play on the finish. Pinot Noir and Chardonnay. Disgorged November 2021. Drink now through 2030.

The palate's a riot of fleshy and flavorsome chardonnay fruit with a helping of stone fruits and another of green mango flavors and deeper-set citrus zest. Seamless balance flows to the finish. A beautiful golden yellow, glinting with bright sparkles. The glittering, crystalline appearance is set off by an eruption of finely chiselled bubbles. This impressive vintage with great depth, tense and mineral, characterised by an elegant vinosity, offers you all the distinction of a well-aged champagne. Served at cellar temperature (11°C to 12°C), this cuvée will bring out the flavours of an excellent sole in lemon butter or a delicious milk-fed veal chop with chanterelle mushrooms.
97 Points, Decanter
On release this is reserved, taut and subtle, with sourdough, confit lemon and gentle blackberry Pinot fruit presented with daring dryness (just 2.9g/L residual sugar) and intensity. The texture surrounding the firm acidity is cool, clean and lightly creamy, the mousse beautifully delicate. Somewhat inscrutable and firm at the moment, this structured and lean Cuvée Nicolas François stands to gain considerable expressiveness with time under cork. Made from 60% Pinot Noir and 40% Chardonnay from 83% grand cru vineyards. 17% oak-vinified with 150 months on lees, disgorged in summer 2022. Drink 2028 - 2038
