Éclats is a blend of the three main Champagne grape varieties, sourced from selected terroirs. Chardonnay is the dominant variety, followed by equal parts of the black grape varieties (Pinot Noir and Meunier). The musts come from the first two vintages and are mainly fermented in wood. The bottles are given time to develop their full aromas thanks to around 80 months of ageing in the cellar. The low dosage preserves the liveliness of this cuvée. Éclats' aromas are rich in white fruits, citrus fruits, flowers and notes of almond and toasted bread. It is recommended to enjoy it between 9 and 12 degrees to appreciate its creamy effervescence and lively freshness. Full-bodied aromas complement the wine, with a lively, salty finish offering refined complexity.

Every year, Billecart-Salmon vinifies base wines from a greater number of parcels than it actually needs for the production of its main cuvées. The tasting Committee tastes each of these base wines and selects only the ones that match the standard and the style of Billecart-Salmon. Some of the wines that are not selected are bottled to be part of a second wine from the House, Inspiration 1818.

This red Burgundy, selected in the vineyard of Auxerre ( 15 km from Chablis) comes exclusively from the variety Pinot noir. Maturing occurs in 2 to 3 year old barrels -and not in new ones- to respect the freshness of the wine. It is bottled after a light filtration in order to preserve its typicity and its character. This can explain the presence of a small deposit in the bottles.

Red fruits flavours can be found, typical of Pinot noir, in this fine wine with a lot of character. It goes perfectly with delicatessen and white or red meat with a light sauce.
