Vibrant varietal aromas of cassis, dried herbs and aniseed lead to a smooth, soft palate with rich fruit flavours of blackberry, blackcurrant and a touch of mint. This well rounded wine shows subtle oak notes, framed by soft, plush tannins.
Grapes are night harvested, then destemmed & fermented in potter fermenters. Pump overs occurred twice daily for 7 days before being pressed off. Complete malolactic fermentation was completed before maturation. The wine spent 18 months in a combination of stainless steel tanks and 10 year old hogshead barrels before bottling.
