Light lemon colour with green reflections, the wine emits aromas of struck flint, wet stone and citrus. The palate is lively and textured with vibrant acidity that gives an extra dimension to the wine alongside the savoury fruit concentration. Enjoy with a plate of tempura fried vegetables.

The wines of Domaine Christophe all display classic Chablis notes of shells and green apples on the nose, along with a pretty, underlying hint of white flower and lemon. It's the kind of bright nose that gives the drinker an intimation of the acidity and tension that will follow on the palate, which is indeed nervy but also generous with an appealing balance of flavours offset by a rocky, shell-y harmony. The wine finishes with the sort of mouth-coating minerality and mouth-watering citrusy acidity that makes Chablis a favourite amongst lovers of wines that truly reflect their terroir. Fourchaume is one of the most famous climates in Chablis withwest/southwest sunny terroir, where the grapes ripen well.

This wine is the  “Signature” of our oenologist Dimitri Bazas. This Bourgogne Chardonnay comes from a selection of our best barrels of Chardonnay. The grapes are grown in the classic regions of Puligny, Meursault, and Rully. This harmonious blend gives it both the classic character of Chardonnay from the Côte d'Or as well as the floral elegance, which is typical of the Côte Châlonnaise.

 

The grapes are manually harvested and aged for 10 months in barrels. This wine is made up of a selection of 30 barrels (30% of which are new). The wine is bright yellow with golden highlights. It has strong aromatic intensity; the nose is rich and well opened, with notes of exotic fruits and white flowers as well as notes of caramel and vanilla on a background of toasted bread. It is fresh on the palate with an opulent body, smooth and round. At the finish, it has a good aromatic persistence of fruit, united with a good balance between the acidity and the roundness.

This wine is made of grapes grown on calcareous clay and limestone soils. Hand-harvested, spontaneous fermentation, unfined and unfiltered. This wine has an intense and vibrant cherry color. This natural wine appears slightly cloudy due to it’s lack of processing. On the nose, it has lively aromas of black cherry and fresh plum. The palate is fresh and persistent, silky with soft tannins and has a lush floral flavor that combines raspberry fruit.

All our wines are organic and vegan, respecting each variety at all times, so that they express in the bottle the place where they come from. The altitude, cold climate and poor soils result in wines with their own personality. Different among them, as the varieties are different, but they all maintain a line of freshness, fruit and minerality of our terroir.

The influence of the Atlantic Ocean is on full display, with its moderating influence playing its part in bringing balance to this wine. While it is ripe and full bodied, much like its white counterpart, this is vibrant and focussed, with no shortage of complexity and minerality.

Telmo’s red wine, once again from Galicia, is a red that shows the character of the stony hills and the Atlantic Ocean. This is a red wine made of 100% Mencia, a Spanish varietal found scattered through the country’s northwest. The vineyards are organically farmed, and the fruit is fermented again in stainless steel in order to maintain freshness, and using indigenous yeasts.

Telmo Rodríguez’s journey through Spain reviving and recuperating vineyards has led him to work with 43 different varieties. Although established in Rioja, he has also put Málaga back on the map and worked with Garnacha in the Sierra de Gredos, as well as establishing wineries in other regions. This Mencía is fermented and aged in stainless steel, revealing the variety’s purity. Sarah Jane Evans MW: Forward, juicy aromas. Distinctly individual profile, with dense, succulent fruit and a long, ripe finish. Beth Willard: Pretty nose with tomato vine, sour cherry, floral. Very crunchy, green freshness and just the right amount of grippy tannin. Highly drinkable. David Williams: Lovely, pure, graceful and fragrant – full of violet and raspberry juice, racy and succulent with silky tannins and a twist of bergamot and blood orange tang, beetroot earthiness. Produced with the RIPASSO technique deliberately applied in a more restrictive way than the production specifications, it is obtained by passing the Valpolicella Classico over the Amarone pomace only once. This is light, crisp and steely with a cascade of citrus notes flooding in. Lemon, lime, Fiji pear and apple bounce around together. There is a creamy mouthfeel with a hint of banana which makes this a great midweek refresher.

It’s hard to pick just one of the many excellent Viogniers that Laurent Miquel produces around this price point, but for the money this is hard to beat, with its voluptuous white peach and nectarine fruit (harvested at night, as the name of the wine suggests).
