This wine is from the northwest part
of Lazio, near the border with Umbria. Legend has it that a bishop traveling to Rome would send a scout
ahead of time to establish which inns were offering the best wines and he'd mark them with the word Est (which translates to “it is” in Latin). When he reached Montefiascone,
the wine was so excellent there that the scout noted “Est! Est!! Est!!!” on the local inn’s front door, and
so this wine is a nod to this story.
A blend of three
native grapes. It has refreshing lemon and green apple notes, some minerally sensations and a little
breadiness. On the palate, it's refreshing, citric and savoury with lots of bright acidity and a lively
fish.
