Domaine Bernard Defaix is a highly-rated family estate based in Milly, with the vines for this bottling averaging 30 years age. Ten months lees ageing adds to the complexity on both the nose and palate. Refined, classy and complex characters on show here, which meld beautifully with the ripe peachy fruit notes. A very fine, expressive, distinctive Chablis which is ready to drink now but will age very well for many years.

A straw gold colour and very fine bubbles. Its delicate hue comes from to the use of a high percentage of Chardonnay and of the first pressing only. The first aromas reveal the citrus character of the Chardonnay, such as lime and grapefruits. Red fruit aromas then come out, including redcurrant, raspberry, morello cherry - typical Pinot Noir. On leaving the wine to open up, candied fruits, even exotic fruits of Pinot Meunier appear with aromas of banana and pineapple. The palate is lively. The nose is confirmed by the first taste, including citrus, almonds, toasted bread and "brioche"... but also redcurrant jelly, and dark fruits like cherry, fig or blackberry. The palate is full, quite long, with a very clean finish. Elegant, but not without complexity, this wine perfectly illustrates what is "the house style." Blend: 45% Pinot Noir, 33% Chardonnay, 22% Pinot Meunier.

Based on the 2015 vintage, the latest release of Paillard's NV Extra-Brut Première Cuvée was disgorged in August 2019. Opening in the glass with delicate aromas of pear, crisp orchard fruit, brioche, white flowers, citrus zest and nutmeg, it's still youthfully tightly wound, with a medium to full-bodied, racy and incisive profile that's impeccably balanced. Elegant and precise to my palate, this is more about potential today, as real complexity is waiting in the wings. The only thing required is a bit of patience.

A hymn to the bright delicacy of Pinot Noir, the Premiere Cuvee Rosé is named on account of its composition of only the first pressing. The pink copper colour with a hint of raspberry when young evolves to salmon while ageing. The fine bubbles are due to a strict selection of the best grapes, perfectly controlled temperature in the cellar and very long ageing. The initial aromas of redcurrant and red fruits evolve to morello cherry, wild strawberry and violet while breathing in the glass. A touch of lemon denotes the discrete presence of Chardonnay. With age, aromas tend towards dark fruits like dark cherry, fig and blackberry. Red fruit captured at their full freshness on the palate. The finish is bright and long.

There's a touch of orange peel on the nose along with notes of tart red fruit. Despite the lightness and delicacy there is concentration on a creamy palate, where lemon and strawberry play off each other. The finish reveals even richer citrus on this subtle wine.

Intense, bright, straw gold. Very fine and persistent effervescence. Primary notes of white fruits and fresh almond, generous but not opulent. This is followed by aromas of chocolate and toast with fresh raspberry, star anise and candied chestnuts. The attack is both lively and rich, blossoming generously on the palate. The same aromatic richness promised on the nose is found on the palate. Texture is both animated and chiselled, with saline notes, and a very long, persistent finish.
There are more than 30 crus of the finest terroir of Champagne in the blend, the composition of which is a house secret. Exceptionally high for Champagne, the “reserve wines” account for half of the blend. They are the other essential player in the D : Z cuvée. Some of these wines underwent their first fermentation in barrel. They were then kept in stainless steel, and for some of them for more than 10 years in bottle, resulting in an intensified autolysis. Ageing is far longer than the legal requirement: three to four years in bottle “sur lies”, followed by six months rest after disgorgement.

This is a fascinating wine, the most vinous of Paillard’s current releases, offering quiet scents of fresh pear, dried caramel and honeycomb without any hint of sweetness. While Champagne without dosage can sometimes be aggressive in its textures or flavors, this one is delicate. The wine’s stamina seems to grow out of its rich flavor depth, extending into a luscious texture and compelling persistence.

The influence of the Atlantic Ocean is on full display, with its moderating influence playing its part in bringing balance to this wine. While it is ripe and full bodied, much like its white counterpart, this is vibrant and focussed, with no shortage of complexity and minerality.
Telmo’s red wine, once again from Galicia, is a red that shows the character of the stony hills and the Atlantic Ocean. This is a red wine made of 100% Mencia, a Spanish varietal found scattered through the country’s northwest. The vineyards are organically farmed, and the fruit is fermented again in stainless steel in order to maintain freshness, and using indigenous yeasts.
