I've asked fifth-generation Julia Walch on several occasions about the blend for Beyond The Clouds, but she steadfastly refuses to give away the secret, other than to confirm that it's ‘up to 85% Chardonnay’. 2000 was the first release and it has since risen to become one of Alto Adige's most noteworthy whites. The grapes are all picked on the same day and co-fermented in French oak barriques, one-third new. Still woody, it's clean and fresh with an intense stony core of pithy pink grapefruit, apricot skin, nectarine, and some smoky, flinty notes. Vertical and with great balance, it combines glacial freshness with a creamy, fragrant finish of apricot and jasmine. Older vintages have developed lovely exotic yellow fruit characters, and you can expect the same here. Loads of potential.

Based on the 2015 vintage, the latest release of Paillard's NV Extra-Brut Première Cuvée was disgorged in August 2019. Opening in the glass with delicate aromas of pear, crisp orchard fruit, brioche, white flowers, citrus zest and nutmeg, it's still youthfully tightly wound, with a medium to full-bodied, racy and incisive profile that's impeccably balanced. Elegant and precise to my palate, this is more about potential today, as real complexity is waiting in the wings. The only thing required is a bit of patience.
Winemaker Notes
A straw gold color and very fine bubbles. Its delicate hue comes from to the use of a high percentage of Chardonnay and of the first pressing only. The first aromas reveal the citrus character of the Chardonnay, such as lime and grapefruits. Red fruit aromas then come out, including redcurrant, raspberry, morello cherry - typical Pinot Noir. On leaving the wine to open up, candied fruits, even exotic fruits of Pinot Meunier appear with aromas of banana and pineapple. The palate is lively. The nose is confirmed by the first taste, including citrus, almonds, toasted bread and "brioche"... but also redcurrant jelly, and dark fruits like cherry, fig or blackberry. The palate is full, quite long, with a very clean finish. Elegant, but not without complexity, this wine perfectly illustrates what is "the house style." Blend: 45% Pinot Noir, 33% Chardonnay, 22% Pinot Meunie.

A hymn to the bright delicacy of Pinot Noir, the Premiere Cuvee Rosé is named on account of its composition of only the first pressing. The pink copper color with a hint of raspberry when young evolves to salmon while ageing. The fine bubbles are due to a strict selection of the best grapes, perfectly controlled temperature in the cellar and very long ageing. A house favorite, Andosol draws inspiration from the historic field blends of California. The nuances in this wine pay homage to European principles of winemaking, while expressing familiar traits often found in the new world. The varying and distinctive landscape of the vineyard parcels included in this Cabernet Sauvignon allow for something very complex to come together. Some oranges, too. Fragrant and nuanced. Medium to full body with tight yet refined tannins. Rather linear, tense and elegant, but lacking neither power nor definition. Better to give it a few years to deliver more complexity.

Distilled at Jura Distillery, this Island Region is a bottling from The Old Malt Cask range at Hunter Laing & Co. The marvellous expression was aged for 14 years in a single hogshead cask and this is one of only 304 bottles. Bottled at 50% abv and free from chill filtration with natural colour.
Expect leafy, sweet and fresh aromas, followed by a palate full of orange pulp and a touch of fennel. The finish is long and grassy, with a hint of ginger.
Named for the island just 7 iron away from Islay. Expect ocean influence, lack of peat smoke. The distillery offerings are often gimmicky, finishes and different cask types, however major changes throughout the last decade, especially since 2018. Streamlining 200 years of history into a clean fruit driven style with saltiness and oak compliments.
Tamdhu 14 Year Old
A single cask selection by Hunter Laing, this Tamdhu 14 Year Old is part of the Old Malt Cask collection. This is a range is for connoisseurs of the finest expressions of Single Malt Scotch Whisky. One of 398 bottles, this single cask was distilled in April 2007 and bottled in June 2021. This Speyside malt spent its maturation in sherry cask, which has given a wonderful punch of sherried character to the dram. Free from chill filtration and artificial colouring, this is bottled at 50% abv. A no fuss whisky that is full of character.
Toffee, juicy berries, and chocolate all arrive on the nose. The palate is rich, with hints of caramel, orchard fruits, and creamy fruit trifle. A long finish awaits, with lingering hints of fruits and freshly planed oak.
A distillery created to supply the blended whisky boom at the end of the 19th century. Closed between 1927 to 47. Primarily used for Famous Grouse until released as a single malt in 1974 The name Tamdhu means little dark hill.

Distilled at Speyside's Craigellachie distillery in May 2006 and matured in a sherry butt for 15 years before bottling in March 2022, this single cask expression forms part of independent bottler Hunter Laing & Co's Old Malt Cask range. Only 562 bottles have been produced, each one at a strength of 50% abv.
The nose has black cherry, toffee, and garden herbs. The palate has notes of sweet red berries, smoked meats, and gunpowder before giving way to a long, pleasant, and oaky finish.
Founded in late 19th century Craigellachie is now owned by Bacardi, they released their 1st single malt in 2004. Until then its primary output was used for the White Horse blend. Another user of worm tubs, the long fermentation coupled with lighter copper contact from the cold worm tubs results in a fruit driven very aromatic style of whisky.
Benrinnes 16 Year Old
Part of the First Editions collection from Hunter Laing, this 16 year-old single malt made by Benrinnes was aged solely in a sherry butt and bottled at 55.1% ABV. The nose holds notes of caramel and rhubarb, and the palate brings flavours like cinnamon and toffee apples. The finish is dryer, with notes of coffee and spice. Only 270 bottles are available worldwide.
Built in 1826, at the foot of the Rinnes mountain, the distillery was washed away by flood 3 years later. Rebuilt, bankrupted twice and reopened only to be then burned to the ground in 1859. The new make spirit is robust due to short neck stills and worm tub condensers. A rarity in Scotland single malt, Benrinnes was partially triple distilled until 2007.

The Il Poggione 2018 Brunello di Montalcino reveals a dark and savory character with more fruit weight and concentration than you might find in many of its peers. This wine shows a dense center of gravity that is padded with dark cherry, blackberry, toasted spice, mahogany smoked meat and tilled earth. Despite the robust aromas, this Sangiovese is actually quite streamlined and polished in texture. The tannins are soft and veering toward accessibility. This is an ambitious production of 200,000 bottles. The estate's Riserva Vigna Paganelli was not made in 2018, so fruit from that wine went here instead.
