Every year, Billecart-Salmon vinifies base wines from a greater number of parcels than it actually needs for the production of its main cuvées. The tasting Committee tastes each of these base wines and selects only the ones that match the standard and the style of Billecart-Salmon. Some of the wines that are not selected are bottled to be part of a second wine from the House, Inspiration 1818.

The 2012 Brut Rosé Cuvée Elizabeth Salmon offers up hints of red berry fruit, ginger, spice, rosewater, mint and crushed flowers. There is a feeling of classic austerity that runs through the 2012. I would prefer to cellar this for at least a few years, as it is quite reticent at this stage. Chalk, mint, white pepper and bright saline accents linger on the pointed finish. Dosage is 3.8 grams per litre. Disgorged: first trimester 2023.

Incredible aromas of brioche, bread dough and pie crust with superb, electrifying fruit, from peaches to fresh apples. It’s driven, mouthwatering and with fantastic structure, yet it’s so balanced and creamy. Very fine and silky bubbles. It’s better and better as it warms slightly in the glass.

The 2012 Brut Blancs de Blancs Louis Salmon is a gorgeous Champagne. Lemon confit, spice, baked apple tart, chamomile and dried flowers are all nicely amplified. The 2012 was done 75% in tank and 25% in oak, with most of the lots undergoing malolactic fermentation. There's a feeling of reserve in the 2012 that is quite appealing. This edition is terrific, but it also needs time to be at its best. I would be in no rush to open this. Low yields and a year beset by frost, hail, heavy rain, mildew and sunburn at various times produced a rich Champagne. The blend of sites in Mesnil-sur-Oger, Chouilly, Cramant and Oiry works so well. Dosage is 3.9 grams per liter. Disgorged: first trimester 2023.

Super long finish with a nice balance overall. An easy-drinking wine but still with nuance and complexity in terms of the flavour details. Needs time to round out and become more expansive. Fully saturated red-ruby. High-pitched aromas of raspberry, blackberry, spices, violet and grilled nuts. Sweet and silky but also juicy and lively, thanks to harmonious acidity keeping the nicely concentrated flavors vibrant. This boasts excellent balance; not at all made in a jammy style, this finishes very clean, steely, and classically dry (about 3 g/L rs), with a very typical underlying note of graphite. A blend of 70% Corvina and Corvinone, 25% Rondinella and 5% Molinara all grown at roughly 400 meters asl but the vines are specifically located where the hill changes direction, such that the grapes bask in a fresher, windier, and more sunlit area . There the grapes ripen because of the light and not of the heat, which is important because while the grapes need to be concentrated, they also need to have enough acidity. The wine ages three and a half to four years in oak and then one year in bottle. Drinking window: 2027-2038.

Basa is made from Verdejo and Viura grapes in the Rueda DO, about two hours northwest of Madrid. The region is famous for fresh white wines made from Verdejo and this is a fitting example. The name comes from the 40-year-old 'baso' or bush-trained vines that are planted on limestone-rich soils at over 700-meters elevation on a plateau along the Duero River. The vineyard is farmed organically, and fermentation is carried out spontaneously with native yeast. Expect a fresh, fruit-driven white wine with just the right balance between charming fruit and aromatic complexity.

Red-fruited with notes of cherry, raspberry, strawberry but also has a hint of cassis. There is a slight dash of spice, dried herbs and floral character to it as well. Fresh and light with fine-grained tannins. Pop this in the fridge for 20 minutes and enjoy it with a slight chill! 

 

Fruit for this wine is sourced from 50-year-old vines, growing on hills around the cru sites in the northern part of region. The soil is partially granitic, which helps to retain heat in the day but cools off by the evening, contributing to the wine's fresh fruit quality. This Gamay is hand harvested, partially destemmed, undergoes semi-carbonic maceration and is fermented with native yeasts. The wine is then aged in stainless steel.

The wine is an intense red with violet tints and aromas of small red fruits. From the Patagonian mountain range, this wine has notes of cassis, raspberry, plum and mint. It is well-balanced, with soft tannins, velvety and very fruity. 

The grapes for this wine come from vineyards in General Roca, Alto Valle de Río Negro, Patagonia. The grapes are harvested manually in 20kg cans during the first week of April. They undergo cold pre-fermentation maceration for 48 hours, alcoholic fermentation at controlled temperature in cement vessels of 9,000 liters capacity for a period of 12 days with periodic pump-overs and de-staging. After the malolactic fermentation, the wine is aged and preserved until bottling. Aging period in the bottle is for 3 months.

Grown in the Helderberg Vineyard - right next to Somerset West. Decomposed granitic soil down the mountain at 190 meters above sea level protected against the South Easter. The grapes were picked at optimal ripeness and cooled overnight to 4 degrees celsius. The next morning the grapes were destemmed to open top fermenters. The juice underwent spontaneous fermentation and stayed on the skins for as long as possible. Pressed into French oak small barrels - 40% new oak, 18 months in barrel, blended and bottled.

Blankbottle Brave, Stellenbosch - 2021

 

Grown in the Helderberg Vineyard - right next to Somerset West. Decomposed granitic soil down the mountain at 190 meters above sea level protected against the South Easter. The grapes were picked at optimal ripeness and cooled overnight to 4 degrees celsius. The next morning the grapes were destemmed to open top fermenters. The juice underwent spontaneous fermentation and stayed on the skins for as long as possible. Pressed into French oak small barrels - 40% new oak, 18 months in barrel, blended and bottled.

Bright notes of fresh citrus, white flowers and mineral nuances mingle on the nose. The elegant palate is driven by vibrant acidity and expressive flavours of citrus and stone fruit. A good estate to note down. Brothers Ludovic and Julien Meffre are making good wines here outside of the classified rankings that dominate the appellation. It has a touch of hedgerow in it, which in my mind is shorthand for not being over-polished, so you still get a sense of vibrancy but of actually being made by someone, not pulled off a conveyor belt. It's not the most sumptuous 2018 that you're going to find, but it's beautifully enjoyable, full of vigour and displays the ripe fruit of the vintage.

The 2018 Cheval des Andes is a blend of 70% Malbec and 30% Cabernet Sauvignon fermented in small lots in 3,000- to 8,000-liter tanks and matured 40% in 225-liter oak barrels, 40% in 400-liter oak barrels and the remaining 20% in 2,500-liter oak vats for 13 months. Ninety percent of the oak used was French and the rest a blend of Austrian, Slovenian and German oak, 50% of it new. 2018 has been one of the best vintages in recent times in Mendoza, and the wine shows it. It's a cooler vintage, and the wine has improved in freshness and elegance without losing any clout. It's 14.5% alcohol and has a pH of 3.73. This is young, juicy, elegant and balanced and still has some herbal and toasted notes; it's medium to full-bodied, with the creamy and luxurious texture of the modern Bordeaux, ultra fine tannins and a long, dry and precise finish. It's still undeveloped and seems to have all the components and the balance between them for a long and positive development in bottle. With wines like this, I sometimes wish I had a time machine so I could see them in 20 years from now... I think this is the finest Cheval des Andes I've ever tasted. 100,000 bottles produced. It was bottled in January 2020.

Partnering 70% Malbec and 30% Cabernet Sauvignon from Las Compuertas and Paraje Altamira, this has less tannin, density and acidity than the 2017 release, but retains perfume, polish and depth. Floral and refined, with subtle coffee-bean oak, sculpted tannins, plum, raspberry and blackcurrant fruit. Classy stuff. This confirms Cheval des Andes' standing as one of South America's greatest reds, showing that, as technical director Gérard Gabillet puts it, 'we understand our terroirs better and better every year'.
