This single-vineyard wine comes from old Chardonnay vines planted by the Romain's (winemaker) great-grandfather in the 1930's. The berries on these vines are small and the flavours are concentrated. The vineyard is classically located on the east side of the slope and the soils are made of fine clay, which gives the wine good structure. Fermentation is via native yeasts and takes place in a 225L barrel, where the wine remains for a year on its fine lees. The wine is then racked in a tank and ages for one more year in stainless steel. This wine is not filtered or fined and only a small amount of sulphur is added.
This dynamic wine has aromas of ripe lemon, tone fruit and white flowers. On the palate, the wine is invigorating but round with some finely integrated hints of oak and a saline, refreshing finish.
